Sweet Potato, Apple and Sausage Breakfast Patties

Now would be the appropriate time for me to introduce you guys to my new online best friend/hero/slight love affair, Juli Bauer.  Juli writes PaleOMG which has long been one of my favorite paleo blogs to read.  She’s got an awesome arsenal of recipes that I copy often, and not to mention she’s f-ing hysterical. I’m talking sister from another mister right now.  As fate would have it, I was literally eating one of these sausage apple sweet potato patties one morning, when our mutual friend introduced us over facebook.  Choked on my patty a little bit, not gonna lie. Anyways, you guys should all start reading PaleOMG on the reg.  I’ve added it to my blogroll on the lower right corner so it is easy for you to get there.

I noticed I have been slacking in the “breakfast” category for you guys lately, so I thought I’d post about these babies, courtesy of PaleOMG.  Yes, I can probably find a couple more reasons to say PALEOMG in the next few paragraphs.

These are a great little Sunday night project.  They’re easy, you get to use your hands, and boom goes the dynamite, you have breakfast for the whole week.  I typically bring a tupparware full on MOnday morning and leave it at work, and then have breakfast all ready for me every morning that week.  No “too-busy-i-hate-mornings” excuses!


INGREDIENTS (about 15-16 patties):

1lb hot Italian sausage, removed from casing

1 – 1 and 1/2 sweet potatoes (Depending on size)

1-2 organic apples, cored (again, depending on size)

1 tsp salt

1 tsp pepper

1 tsp dried basil

1 tsp oregano

1 tsp rosemary

1 tsp tarragon

1/2 tsp cinnamon (extra if you’re a cinnamon whore like me)

fat of choice (I used coconut oil)

DIRECTIONS:  Use a food processor to shred your sweet potato and apple.  If you don’t have one, you shouldn’t be cooking.  Or probably living.  If you don’t have one, buy one ASAP, and hand shred them for today.  You’re just going to create a few grey hairs while you do it.

Place the sweet potato and apple in a large mixing bowl with your sausage removed from its casing.  Now, I’m still working on my favorite sausage-apple-sweet potato ratio, so it’s something you’ll have to play with as well.  Add your seasonings and mix everything up well with your hands.

Heat up a large skillet over medium-high heat and start to form patties from the mixture using your hands.  Put some fat (coconut oil again is what I used) into your pan, and go to town.  The patties take about 5-6 minutes on each side, but monitor carefully.

This will net you about 15-16 patties, more than enough for a few at breakfast every morning of the week.

    I just bought all the ingredients to make these…can’t wait! One question though…was your sausage pre-cooked? I bought the kind that isn’t so should I took it up first?

      Hi Lauren! No, I don’t buy precooked sausage – I mix everything up, and then the sausage gets cooked once you fry up the patties 🙂 Have fun and enjoy!
