Snack Attack – Spiced Nuts

One of my personal paleo pitfalls is snacking.  I’ll do great, eating healthy, fresh food for my meals…and then get lured by the chips, dips, candy, etc at work…or the Coffee Bean downstairs that is begging me to eat a rice krispie treat…and BOOM it’s over.  Creating your own paleo snacks ahead of time for when these instances occur is like having a little Paleo Angel on your shoulder saying “Don’t…do..it…”  Really quite helpful the little guy.

In terms of snacks, it really doesn’t get much easier than making yourself a big batch of spiced nuts (immature snicker).  They’re easy to make in bulk, and you basically can’t possibly mess this recipe up!  You don’t have to use the exact combo of nuts that I used – feel free to create your own combos!

SPICED NUTS

INGREDIENTS:

Few handfuls of hazelnuts

Few handfuls of pistachios (shelled)

Few handfuls of almonds

Few handfuls of walnuts

1 tsp chili powder

1/2 tsp cumin

1/2 tsp black pepper

1/2 tsp sea salt

1 T olive oil

DIRECTIONS:  Grab your largest skillet and heat it up over medium-high heat.  Once the skillet is nice and hot, go ahead and put all of your nuts into the pan (again, immature snickers, go ahead, you know you want to).  Roast the nuts in the large skillet until they are lightly browned.  Keep a good eye on these and keep stirring them around so you don’t just wind up with one black side and one raw side!  While they are roasting, combine your spices into a bowl.  When they’re finished to your liking, put the nuts in a large bowl (I like to put them directly into a tuppaware for easy transportation to work/the gym).  Coat them with olive oil.  Pour the spice mixture onto the coated nuts and mix well.

There you have it – the perfect tasting, spicy, snack for when the Cookie Monster wants to come out and play!
