Lunch Time Roll-Up

So, you may hate me for posting this “recipe” – even calling it a recipe is a stretch. You may be thinking “wow Ashley, you’re a regular Chef Boyardee.” Or maybe you’re thinking just a simple “sweet idea bro.”  I also realize that “Lunch Time Roll Up” sounds like a dance.  Maybe it should be.  I’m accepting video submissions.

I don’t REALLY care if you want to judge me for calling this a recipe, because what I really want to call it is a savior. Lunchtime can be one of the hardest meals for people first starting to switch to Paleo to figure out, because everyone needs something that is quick, easy and tasty. If you’re out of leftovers, it can be hard to check all three of those boxes. And we all know what skipping lunch leads to….the hunger monster at 4PM. The Hunger Monster always seems to want cookies, doesn’t he? Damn him…

Cookie Monster no like Paleo Diet

Stay in front of your hunger with these easy “Roll Ups” that literally take about 4 minutes to make. You don’t have to use the same ingredients as me – I used leftovers from a DELISH paleo pizza that I made on Friday that I’ll be posting later this week. Get creative and tell me what combos you made!

Simple and tasty…what else can you ask for

LUNCH TIME ROLL UPS

INGREDIENTS:

4 Slices of Deli Style Ham

4 Slices of Pepperoni

1/4 jar of peperoncini peppers

1/4 jar of artichoke hearts

Dijon Mustard

Balsamic Vinegar

Black Pepper

DIRECTIONS: Place your ham on a cutting board.  Put a piece of pepperoni over the ham.  Spread a bit of Dijon mustard over the pepperoni.  Place a few peperoncini peppers (who knew that was spelled that way? wtf?) and two artichoke hearts on top of the pepperoni.  Splash with a few drops of balsamic vinegar to give it some bite, and top with black pepper.

Roll this little sucker right up. Like a meat fruit roll up. Ew.

Now, carefully roll the ham over, tucking the end into the middle.  Cut in half if you’re feeling fancy.  Consume.  Feel happy to be eating a delicious lunch.  Add a side of veggies or a little kale salad to make a complete meal.

Enjoy these, and try other varieties!  Fresh basil, tomato, bell pepper, etc.  Goat cheese would be amazing if you’re feeling sinful.

    I love lunchtime roll ups! Most days it’s all I have time to grab. My favorite combo is a thin circle of genoa salami, a provolone cheese slice and a sheet of Trader Joe’s roasted seaweed wrap on the inside. Then roll up. I store the seaweed in a baggie until lunch time so it still *crunches* when you bite it. I’ll usually fill up after three.
    The other morning I had roast beef & a mozzarella cheese stick for breakfast. Fast and easy.

    I don’t even eat meat, but I think one with turkey, avocado, tomato, cucumber and fresh dill would be a nice, refreshing combo!
