Crispy Pancetta Chips

There are two truths.  1) I love to watch football.  And, 2) I love to eat junk food while I watch football.  Now, I KNOW I am not alone in those principles.  Who else’s diet goes to complete crap when Fall rolls around and every Sunday is suddenly filled with pitchers of Shocktop, nachos, wings, and hell, donuts for the 10AM games??  The guy that announces the Red Zone channel is way less annoying 5 mimosas and 3 donuts deep. I get it, trust me.

Touchdown

So, I’ve been on the hunt for paleo snacks to eat during football games that also have a “junk food” feel.  These pancetta chips were actually something that I saw made on my favorite channel on the Food Network, Giada at Home, and then I just paleo-ized the recipe.  They’re crunchy, spicy & sweet, and disappear VERY fast.

CRISPY PANCETTA CHIPS

INGREDIENTS:

1lb. pancetta – ask the deli man to slice it 1/8th or 1/4th inch thick

6 T melted honey

2 T Dijon mustard

A few shakes of cayenne pepper (depending on how hot you like it)

This is what sliced pancetta looks like

DIRECTIONS:  Preheat your oven to 450 degrees.  Line a baking sheet with some parchment paper and then just to be safe, grease with just a touch of olive oil.  Space your pancetta slices out on the baking sheet, and bake from 16-18 minutes until crispy.  Remove from the oven, and then turn on your broiler.

Meanwhile, in a small bowl, mix together your honey, mustard and cayenne.  Adjust the taste according to preference – sweeter, spicier, etc.  Brush your crisped pancetta slices with the honey mustard mixture, and then place in your oven under the heated broiler, for about 2-4 minutes, until browned.

WATCH IT with the broiler.  Things go from awesome to completely burnt within seconds.
